Vegan Brownies

Ingredients

  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 tablespoon vanilla
  • 1/2 cup unsweetened cocoa
  • 4 ounces (about 1/2 cup) unsweetened applesauce
  • 2 ounces unsweetened chocolate, melted
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 1 cup semi-sweet chocolate chips (Ghiradelli brand)

Instructions
  1. Preheat oven to 350 degrees. Line a 9x9” pan with foil and spray with cooking spray.
  2. Stir together oil and sugar. Stir in vanilla, cocoa, and applesauce. Add melted chocolate and salt, stir until smooth. Slowly stir in flour. Add chocolate chips.
  3. Pour into prepared pan and bake 25-28 minutes. Cool before cutting.
  4. Top with a sprinkling of powdered sugar for a pretty presentation!


I chose this recipe because I was interested in making a healthier version of a dessert that college students love – brownies. Normally, brownies contain lots of butter and eggs, both are animal products. According to the film, “Forks Over Knives,” humans should not consume any animal or the products made from them. The research is overwhelming. The film shows how milk has been proven to increase cancer growth and meat and other animal products are causing heart disease and other chronic health problems. Nearly dead patients with some of these diseases switched to a plant-based, whole-foods diet and saw their symptoms disappear. They survived because they used food as medicine. Now, of course, brownies are not the healthiest food option out there; however, these brownies are healthier than some others. There are no animal products in these rich, chocolaty treats, but you can’t tell the difference from the real deal. People shake their heads at the thought of giving up some of their favorite foods because they have animal products within them. Veganism isn’t a lifestyle for everyone, but with recipes like this one, people can make healthier choices and never feel like they’re missing out. I wanted to make these brownies to show that even vegans can enjoy delicious desserts, and carnivores and omnivores won’t know the difference!

I love how chewy and moist these brownies are. They are very rich, but if you love chocolate, which I DO, you'll love them. Making brownies from scratch with real chocolate takes more time (and money) than taking the easy route with a box mix, but I think it's worth it when you can enjoy the rich, delicious flavor. I'll probably make these brownies again soon :)
