Tuna Florentine Sandwiches with Lemon-Caper Vinaigrette
This is a fairly easy recipe; the hardest part is getting all the ingredients at the grocery store.
You will need:
1 (12-ounces) can albacore tuna in water
1 1/2 cups bagged baby spinach leaves
1 cup fresh basil leaves
Lemon-Caper Vinaigrette
Multigrain Bread Slices
First you will need to make the Lemon-Caper Vinaigrette
You will need:
3 tablespoons fresh lemon juice (one lemon)
2 1/2 tablespoon of minced shallots (1 small shallot)
1 tablespoon drained capers
1 tablespoon olive oil
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Dijon mustard
Combine all the ingredients in a small bowl and stir with a whisk.
Next add the vinaigrette with the tuna, spinach, and basil. Should make four sandwiches. You can use toasted or untoasted bread. If you wanna be a real classy kinda student serve with red grapes and wine. You will feel like you stepped into some small Italian town on the Mediterranean.

This is a great recipe for at home or on the go. Tuna is extremely good for you and high omega-3s. Tuna is also a good protein that helps control weight and lower blood pressure. However, if you are pregnant it is advised that you eat little to no fish due to the risk of mercury. Spinach is also good for you and contains vitamin E which is great for the skin. This whole entre is a much better choice than fast food or even some of your local sandwich shops.
