Tomato Cucumber salad

2-3 tomatoes, diced
1 cucumber, sliced and quartered
1 small onion, thinly sliced
1 green pepper, diced
1/8-cup olive oil
½ cup feta cheese



Directions:

1) Combine tomatoes, cucumber, onion and peppers in a mixing bowl and toss.
2) Drizzle with olive oil over the salad and season with salt to taste. Garnish with cheese.




This is a very common dish served in Albania and other various eastern/middle eastern European countries. It is usually prepared in a large bowl and placed in the middle of the table for all to take as they please. Vegetables and cheese are a very big food group in these cultures; most of the dishes contain either or both. Olive oil is used instead of a dressing for this salad, making it lower in calories and healthier for you. This is the most common salad prepared next to the all green salad which is comprised of lettuce and onions mostly, as well as feta, olive oil and vinegar. This salad is easy to prepare and has healthy ingredients that will fill you up without making you feel like you ate too much. The olive oil and salt are a healthy alternative to salad dressings and is a great, light side for any meal.
