Processed carb items such as bread or muffins often have high amounts of canola oil, but this recipe is both vegan and doesn’t have butter or oil. The type of cake mix used is important as well, this brand originated in Germany and has significantly less sugar/additives than traditional mixes. (i.e. Betty Crocker) This recipe is inexpensive to prepare, even though the better quality cake mix is more expensive than a typical mix. This recipe yields up to 20 muffins, which is approximately 25 cents per muffin, compared to $1 per muffin that is a typical convenience food option. Vegan options are not only healthier than recipes using animal products but cheaper as well, eliminating many ingredients and saving time. In addition, you are reducing the negative effects factory farms have on climate change by using less butter, milk, and eggs.
This recipe can be adapted with generally any flavor of cake mix, as long as the mix goes well with pumpkin.
Ingredients 1 can of Pumpkin 1 box Dr. Oeteker Spice Cake cake mix
Thoroughly blend cake mix and pumpkin until all powder chunks are gone, DO NOT OVERMIX. Pourte organic food, so this was surprisinginto baking cups or greased ban, bake at 325 degrees for approximately 10-15 minutes.
