Crazy for quinoa? With summer just around the corner or the need to eat a healthy meal, this Mexican quinoa bowl will do just the trick. It is full of protein and vegetables that will provide you with energy and that "full" satisfied feeling. This recipe is quick and easy to make!
Ingredients
1/2 C. of Quinoa 1/2 C. of White Onion, Chopped 1 Clove of Garlic, Chopped 1 Tbs Lime Juice 1/2 C. spinach (fresh or frozen) 1 Tomato, Diced 1/2-1 C. Black Beans (rinsed and drained) 1/2 Avocado, sliced 1-3 tsp. Olive Oil
Season to Taste
Sea Salt Black Pepper Paprika Cayenne Pepper Cilantro (fresh or dried) Sriracha or Hot Sauce (optional)
Directions
1. Cook quinoa according to package directions and set aside. 2. Using a medium to large pan, sautee onion and garlic for about 3 minutes in olive oil. 3. Add spinach, 1/2 Tbs. lime juice (the rest will be added later) tomato, black beans, and spices (to taste). Let the spinach cook until it is almost completely sauteed. This takes approximately 5 minutes. 4. Add the quinoa, stir in completely. Taste for flavor, add additional spices as desired. Turn the heat onto low while you cut up your avocado. Pour remaining lime juice onto avocado pieces. 5. Scoop the quinoa into a bowl and place the avocado pieces on top with a couple drops of the hot sauce (optional)
Information
Yield : approximately 2-3 servings. Place the rest of the Mexican bowl in the fridge as leftovers.
