Easiest Dinner EVER!!!! I love cooking this meal during the school year when free time is scarce, this is because of its simplicity and it always hits the spot. Also, this is a great winter meal because it is hearty and warming. I learned how to cook this super simple meal when I moved into my first apartment and take advantage of it all the time.
Ingredients: Chicken (fresh or frozen) Potatoes (any type works) Carrots Montreal Chicken seasoning (or a preferred seasoning!) Butter (portions vary depending on number of people and how hungry everyone is!) Anything can be added to this great meal, these are just the ingredients I always use.
Directions: Pre-heat oven to 350ºF Dice potatoes and carrots Line a cookie sheet (or brownie pan) with tin foil -there should be enough tin foil to fold around all of the ingredients Place chicken in center of tray on top of the foil Add a couple slices of butter to the top of the chicken Lightly sprinkle the Montreal Chicken seasoning on the chicken Add diced potatoes and carrots to tray Sprinkle a little more seasoning on mixture Fold the foil around the whole mixture Bake for 1 hour or until the chicken is fully cooked through Relax, study, or do whatever is necessary during the hour of cook time and finally, ENJOY!!
