2-3 servings

  • 4 whole-wheat English muffins, cut in half
  • 8 oz. spaghetti sauce or tomato sauce
  • 8 slices mozzarella cheese (or 4 oz. shredded mozzarella)
  • some sliced onions, bell pepper, mushrooms, olives, salami, pepperoni, anchovies - whatever you like best
  1. Preheat oven to 350°F. (Or nod happily at your toaster oven.)
  2. Spread each muffin half with tomato sauce.
  3. Arrange veggies (and meat if desired) on sauce, and top with cheese.
  4. Place on foil and cook in oven or toaster oven until cheese melts.
Variation: Muffin pizzas are a great way to use up any left-overs in your fridge. Try cooked or raw vegetables, shreds of chicken - anything you can find, that hasn’t yet turned suspiciously green.

Pizza has been a main stay in college students diet for a very long time. The above recipe is a quick and simple way to enjoy this college favorite. The great thing about pizza is that you can top it with whatever you would like. This can become an extremely healthy dish and one that fill an appetite. Not too often can you create a meal for two in about 5 minutes time, so this English Muffin Pizza would be a good addition to any college students cookbook!
