3 ½ cups grated cheddar cheese
8 tbsp softened butter
4 fresh green chiles seeded and chopped
½ tsp ground cumin
8 thick slices of bread
Directions:
1) Preheat oven to 375°F
2) Mix the cheese and butter together in a bowl until creamy, then add the chiles and cumin.
3) Use the extra butter to spread over one side of each side of bread. Place 4 slices of the bread, buttered-side down, on a baking sheet, then spread with the cheese mixture. Top with the remaining slices of bread, buttered side up, and press down.
4) Bake in the preheated oven for 8-10 minutes, until crisp and lightly browned. Serve immediately.
These sandwiches are so easy to make and all the ingredients are easy to get if you don’t already have them. The blend of chile and cheese made it seem like you were eating a baked nacho. It takes about 15 minutes to get everything together and another 10 to bake. These are good for lunch on the go or small events as you can make a lot really quick and easily. They would be good with some chips and salsa on the side. These sandwiches are very versatile and filling and offered a great blend of spice and cheese that would make taco bell envious.
